Dhaba style masoor dal

 

Red lentils promote weight loss and are very good for your digestion due to the high amounts of fiber present in this lentil. Red Lentils (Masoor Dal) is good for diabetics as it regulates the random spikes and drops in the glucose level in the blood. It is abundantly rich in proteins and minerals, which help boost various systems in your body.

Dhaba style masoor dal is easy and delicious recipe. Here we will see how to cook easily this dal.


Step by step instructions to cook


Preparation time - 15 minutes

Cook time - 30 minutes

Serve to - 5-6 person


INGREDIENTS

. 1 bowl whole masoor dal ( brown lentils) 150 gm
. 1 tsp cumin seeds
. 1 tsp mustard oil
. 1 tsp ghee
. 2 dry red chilli
. 3-4 green chillies chopped
. 1 inch crushed ginger
. A pinch of hing
. 6-7 finelly chopped garlic cloves
. 1 onion finely chopped
. 2 medium sized Tomatoes finely chopped
. 1/4 tsp turmeric powder
. 1/2 tsp coriander powder
. 1/2 tsp Red chili powder
. 1/2 tsp garam masala
. Salt as needed
. Coriander leaves to garnish/ mint leaves
. 4-5 cup water or as needed

INSTRUCTIONS

. Bring a pan on the stove at medium flame. Add masoor dal in it . Roast for 4-5 minutes. Then switch off the flame.

. Now bring pressure cooker add masoor dal ,water and salt in it on the stove. After 5-6 whistle switch off the flame.

. Now bring oil in a pan when it's start heated up then add Cumin seeds ,hing in it. Saute for seconds then add ginger in it ,after few seconds add garlic and red chilli , green chillies in it. Saute for 1-2 minutes untill garlic become golden. 

. Then add onion in it. Stir untill onions become golden. Then add all spices powder in it. Mix well. Now add chopped tomatoes in it. Stir untill tomatoes gets soft. 

. Now add cooked masoor dal in it. If water is needed we can add . Mix all ingredients well . Switch off the flame.

. Garnish with coriander leaves. Add ghee while serving. Serve with chapati ,rice and naan.

Kheer

 

Kheer is very simple and most tasty dessert of Indian culture. I am sure everyone have some of good memories about this delicious meal.

Preparation time - 15 minutes

Total time - 45 minutes

Serve to - 8 person


INGREDIENTS

➡️ 1cup of rice ( 20 minutes soaked)

➡️ 2 liter full cream milk

➡️ 1 cup sugar

➡️ 6-7 green cardamom

➡️ 12-15 Almonds blanched

➡️ 1 tsp cuddapah Almond( chironji)


Instructions

. Bring a deep pan add milk in it on medium flame. Boil for 15 minutes.

. Now add rice in it. Boil rice and milk . Simmer over low flame, stirring occasionally till the rice is cooked and milk becomes thick.

. Now add sugar , inner part of cardamom , chironji in it. Mix well and cook for 2-3 minutes till sugar dissolves.

. Now switch off the flame. Kheer is ready to be served. 

. We can add saffron that is optional.

. Garnish with almond or pumpkin seeds.

Paneer butter masala

 

Creamy Restaurant style Paneer Butter Masala is delicious dish. 

This creamy curry is made with onion, tomatoes, cashews, cream and butter and some indian spices.

Preparation time - 10 minutes

 Cook time - 35 minutes

Serve to - 4-5 person

INGREDIENTS

➡️300 gms Paneer cut in cubes

➡️2 medium Onions, finely chopped

➡️1½ teaspoons chopped Ginger

➡️3-4 Garlic Cloves

➡️3 medium Tomatoes

➡️12-15Cashew Nuts, soaked in water for 15 minutes

➡️1 small piece of Bay Leaf

➡️2 Green Chillies

➡️1/2 cup Full Fat Milk

➡️2 teaspoons Kasuri Methi (dry fenugreek leaves)

➡️1/2 teaspoon Garam Masala Powder

➡️1 tablespoon Coriander Powder

➡️1 teaspoon or to taste Red Chili Powder

➡️2 tablespoons Fresh Cream (or homemade malai)

➡️2 tablespoons Butter

➡️2 tablespoons Oil

➡️ Salt as needed


Preparation

. Bring 1 tsp butter in a pan at medium flame. When butter starts heated up add cashews in it fry for seconds then add tomatoes and green chillies in it. Stir for 2 minutes. Then switch off the flame.

. Keep this in a plate to become cool. Then grind this mixture ,keep aside.

. Bring that pan with 1 tsp butter when butter starts heated up add paneer cubes in it. Fry for 2-3 minutes then keep aside.

. Prepare ginger, garlic paste.

. Now bring oil in a pan when oil heated up add,bay leaf and chopped onions in it,stir untill onions become golden then add ginger , garlic paste in it. Stir for 3-4 minutes then add prepared tomato paste in it.

. Stir for 3-4 minutes then add all dry spices in it. Stir at medium flame for 2-3 minutes or surface lives oil. 

. Then add milk ,cream ,salt ,1 cup of water in it . Mix all ingredients then add kasuri methi and paneer cubes in it .

. Now cover the pan for 5-7 minutes at low flame. After that switch off the flame.

. Paneer butter masala is ready to be served. Serve with rice ,naan or chapati.

Aloo chane ki sabji

 

delicious chana curry from Punjabi cuisine is popular in all over India. A spicy and tempting curry is prepared from white chickpeas (kabuli chana), tomatoes, boiled potatoes, onion and basic Indian spices and best enjoyed with chapati,naan,paratha as  evening snack or dinner. 


Preparation time - 8 hours

Cook time - 30 minutes

Step by step instructions to cook Kabuli chana potato curry -

INGREDIENTS

➡️ 1 cup white chickpeas/Kabuli chana

➡️ 2 boiled potatoes

➡️ 2 medium sized Tomatoes ( finely chopped)

➡️ 4 green chillies ( paste)

➡️ 2 medium sized Onion finally chopped

➡️ 1 tsp coriander powder

➡️ 1/2 tsp turmeric powder

➡️ Cumin powder 1/2 tsp

➡️ 1/4 tsp garam masala

➡️ 2 tsp mustard oil

➡️ Salt as needed

➡️ 1/2 inch crushed ginger

➡️ 1 tsp fresh lime juice

 
πŸ‘‰ Soak chickpeas in water overnight or for around 8-10 hours.

πŸ‘‰ Boiled chickpeas for 5-6 whistle in pressure cooker.

πŸ‘‰  Heat oil in a pan over medium flame. Add ginger then add  onion in it ,saute untill it become golden Then add green chilli paste and chopped tomatoes in it.

WHAT IS HUMMUS?

Alright, first let’s back up for a sec — just exactly what is hummus?  In case this is new to you, it’s a classic dish from the Middle East and Mediterranean made primarily from chickpeas , tahini (ground sesame paste), lemon juice, garlic and salt.  Various countries add in their own staple ingredients, like ground cumin. It can be served warm or cold, as a dip or as a spread, and most of all, it’s downright delicious.

INGREDIENTS

. 1/3 cup good-quality tahini
. 2–4 tablespoons cold water, or more if needed
. 2 tablespoons extra virgin olive oil
. 1/2 teaspoon ground cumin
. 3/4 teaspoon salt ( or as needed)
. 2 medium cloves garlic, peeled and smashed
. Juice of 1 lemon (2–3 tablespoons)
. 1 cup chickpeas: boiled and peeled off cover
. Optional toppings: parsley


INSTRUCTIONS


 . Add tahini cold water, olive oil, cumin, salt, garlic and lemon juice to a food processor. Puree until smooth.
.  Add chickpeas,Puree for 3-4 minutes, pausing halfway to scrape down the sides of the bowl, until the hummus is smooth. If it seems too thick, add in another tablespoon or two of water.
. Taste and season with additional salt, cumin, and/or lemon juice if needed.
. Serve immediately garnished with your desired toppings. Or transfer to a sealed container and refrigerate for up to 3 days.

. 8-10 medium sized boiled potatoes
. 15-20 curry leaves
. 6-7 finely chopped green chillies

. 2 medium sized finely chopped onion
. 1/2 tsp kasuri methi
. Salt as needed
. 1 tsp oil
. 1/2 tsp turmeric powder
. Coriander leaves ( to garnish)
. 1/2 tsp cumin powder
. 1/2 tsp coriander powder


Step by step instructions

➡️ Bring a pan add oil in it at medium flame. When oil starts heated up add mustard seeds in it. When seeds starts to sizzle add green chillies and curry leaves in it. After few seconds add onion in it. Stir untill onions become golden.

➡️ Now add boiled chopped potatoes. Mix well all ingredients. Add cumin powder, coriander powder salt and kasuri methi in it. Mix well.

➡️ Cook for 4-5 minutes at medium flame. Add lemon juice in it. Then mix well. 

➡️ Now switch off the flame. Add coriander leaves to garnish. 

➡️ Aloo ki sabji is ready to be served. Serve with chapati, parathe and Puri.

Baba Ghanoush

INGREDIENTS

➡️ 1 big round eggplant ( 500 gm)

➡️ 1/2 bowl tahini

➡️ 1 tsp garlic paste

➡️ Salt as needed

➡️ 1 tsp olive oil

➡️  Coriander leaves ( for garnish)

➡️ Fresh lemon juice ( 1 tsp)

➡️ 1 tsp extra virgin olive oil

➡️ Peprika ( for garnish)

➡️ Roasted cumin powder ( 1/2 tsp)

STEP By STEP INSTRUCTIONS TO COOK

πŸ‘‰ Roast the eggplant. You will find that roasting over an open flame will produce richer smokey flavour. 
 
πŸ‘‰ Discard the skin and reserve the remaining liquid . Let the liquid at room temperature. Blend one time this liquid. So it will become smooth.

πŸ‘‰ Add tahini , garlic , fresh lemon juice ,cumin powder , salt in a bowl. Mix all with help of spoon.
