This type Aloo Baingan curry is quite famous in Northern India. It is relatively very easy to cook and delicious in taste.When we prepare this curry in mustard oil and add some garam masala to it the curry would taste much better or lip-smacking.
How to cook potato eggplant curry
Preparation time- 10 minutes
Cook time- 15-20 minutes
Served to-3-4 person
Ingredients
. 2 medium size potatoes
. 3-4 eggplant
. 1 big onion( finely chopped)
. 12-15 big garlic cloves
. 3-4 green chillies (chopped)
. 1 tomato ( chopped)
. Coriender leaves (for garnish)
. 1/2 tablespoon turmeric powder
. 1 tablespoon red chilli powder
. 1 tablespoon garam masala
. 1.5 tablespoon mustard oil
. 1 pinch hing
. Coriender powder
. Salt as needed
Preparation
. Bring potatoes and peel them off . Now wash and clean them and cut in long shape as shown in the picture. Bring eggplant now, clean ,wash and cut in long shape.Now get onion,garlic,tomatoes ,green chillies in one plate put them aside.
How to cook Aloo Baingan curry step by step process-
When onion gets light golden in color add green chillies and garlic in it.Stir for 2 minutes. Now add eggplant to it fry for 2-3 minutes at medium stove.After that add potatoes in it mix and stir well for 3-4 minutes.
